How To Make Easy Jerk Chicken with Rice & Peas

Ingredients
- 4 bone-in chicken thighs
- 1/4 cup jerk seasoning
- 1 tbsp vegetable oil
- 1 cup long-grain white rice
- 1 cup coconut milk
- 1 cup chicken broth
- 1 can black beans, rinsed and drained
- 1/2 cup diced onion
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions

Rub jerk seasoning all over the chicken thighs and let them marinate for 10 minutes.

Heat vegetable oil in a large skillet over medium-high heat. Add the chicken thighs and cook for 5-6 minutes on each side until browned.

Remove the chicken from the skillet and set aside. In the same skillet, add the diced onion and sauté until translucent.

Stir in the rice, coconut milk, chicken broth, black beans, and cilantro. Season with salt and pepper to taste.

Bring the mixture to a boil, then reduce heat to low. Place the chicken thighs on top of the rice mixture, cover, and cook for 20-25 minutes until the rice is tender and the chicken is cooked through.

Remove from heat and let it rest for 5 minutes before serving. Fluff the rice with a fork and serve the jerk chicken with rice and peas.
