Ingredients

  • 2 chicken breasts, boneless and skinless
  • 2 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 4 cups mixed salad greens
  • 1 ripe papaya, peeled, seeded, and sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • dressing:
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp jerk seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or grill pan over medium-high heat.

  2. Rub the chicken breasts with jerk seasoning and olive oil.

  3. Grill the chicken for about 4-5 minutes on each side, or until cooked through.

  4. Remove the chicken from the grill and let it rest for 5 minutes. Slice it into thin strips.

  5. In a large bowl, combine the salad greens, papaya, red onion, cilantro, almonds, and feta cheese.

  6. In a small bowl, whisk together the dressing ingredients until well combined.

  7. Pour the dressing over the salad and toss gently to coat.

  8. Divide the salad among 4 serving plates and top with the sliced jerk chicken.

  9. Serve immediately.
