How To Make Jerk Chicken Salad with Papaya

Ingredients
- 2 chicken breasts, boneless and skinless
- 2 tbsp jerk seasoning
- 1 tbsp olive oil
- 4 cups mixed salad greens
- 1 ripe papaya, peeled, seeded, and sliced
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese
- dressing:
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tbsp honey
- 1 tsp jerk seasoning
- Salt and pepper to taste
Instructions

Preheat the grill or grill pan over medium-high heat.

Rub the chicken breasts with jerk seasoning and olive oil.

Grill the chicken for about 4-5 minutes on each side, or until cooked through.

Remove the chicken from the grill and let it rest for 5 minutes. Slice it into thin strips.

In a large bowl, combine the salad greens, papaya, red onion, cilantro, almonds, and feta cheese.

In a small bowl, whisk together the dressing ingredients until well combined.

Pour the dressing over the salad and toss gently to coat.

Divide the salad among 4 serving plates and top with the sliced jerk chicken.
