How To Make Gnocchi with Herb Sauce

Ingredients

  • 2 pounds of potatoes
  • 1 ½ cups of all-purpose flour
  • 2 eggs
  • 1 teaspoon of salt
  • 1 cup of fresh basil leaves
  • 1 cup of fresh parsley leaves
  • ¼ cup of grated Parmesan cheese
  • 2 cloves of garlic
  • ¼ cup of olive oil
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes until they are fork-tender. Let them cool, then peel and mash them.

  2. In a large bowl, combine the mashed potatoes, flour, eggs, and salt. Mix until a dough forms.

  3. Divide the dough into small portions and roll each portion into a long rope on a lightly floured surface.

  4. Cut the ropes into bite-sized pieces and press each piece with a fork to create ridges.

  5. Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface. Remove them with a slotted spoon and set aside.

  6. In a food processor, combine the basil, parsley, Parmesan cheese, garlic, olive oil, salt, and pepper. Process until smooth to make the herb sauce.

  7. Heat the herb sauce in a large skillet over medium heat. Add the cooked gnocchi and toss to coat.

  8. Serve the gnocchi with herb sauce hot, garnished with additional Parmesan cheese if desired.
