Ingredients

  • 4 (6-ounce) fish fillets
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • Salt and black pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. Season fish fillets with salt and black pepper.

  3. Dredge each fillet in flour, shaking off excess.

  4. Dip in beaten eggs, then coat evenly with panko breadcrumbs.

  5. In a small bowl, mix together parmesan cheese, oregano, garlic powder, salt, and black pepper.

  6. Sprinkle the parmesan mixture over the fish fillets, pressing lightly to adhere.

  7. Heat olive oil in a large skillet over medium-high heat.

  8. Add the fish fillets and cook for 2-3 minutes on each side, until golden brown.

  9. Transfer the fish fillets to a baking sheet lined with parchment paper.

  10. Bake for 10-12 minutes or until the fish is cooked through and the crust is golden brown.

  11. Serve hot.
