How To Make Sesame-crusted Fish with Samphire & Clams

Ingredients
- 4 fish fillets (such as cod or haddock)
- 1 cup sesame seeds
- 2 tbsp vegetable oil
- 1 cup samphire
- 1 cup clams
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions

Preheat the oven to 400°F (200°C).

Season the fish fillets with salt and pepper.

In a shallow dish, spread out the sesame seeds. Press the fish fillets into the seeds to coat evenly on both sides.

Heat the vegetable oil in a large ovenproof skillet over medium-high heat. Add the fish fillets and cook for 2-3 minutes per side, or until golden and crispy.

Transfer the skillet to the preheated oven and bake for another 5-7 minutes, or until the fish is cooked through.

Meanwhile, in a separate pan, steam the samphire for 2-3 minutes until tender.

In a saucepan, add the clams and a splash of water. Cover and cook over medium heat for 3-4 minutes, or until the clams have opened. Discard any unopened clams.

To serve, divide the samphire and clams among four plates. Place a sesame-crusted fish fillet on top. Serve with lemon wedges.
