How To Make Almond-Crusted Fish with Saffron Sauce

Ingredients
- 4 fish fillets (such as cod or tilapia)
- 1 cup almond flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 eggs, beaten
- 2 tbsp olive oil
- For the saffron sauce:
- 1 cup heavy cream
- 1/4 tsp saffron threads
- 1/2 tsp lemon zest
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley, for garnish

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a shallow dish, combine the almond flour, salt, and black pepper. Dip each fish fillet into the beaten eggs, then coat it with the almond flour mixture, pressing gently to adhere.

Heat the olive oil in a large skillet over medium heat. Add the coated fish fillets and cook for 2-3 minutes per side, until golden brown. Transfer the fillets to the prepared baking sheet.

Bake the fish in the preheated oven for 10-12 minutes, until cooked through and the almond crust is crisp.

Meanwhile, prepare the saffron sauce. In a small saucepan, heat the heavy cream over medium heat. Add the saffron threads and let them steep in the cream for 5 minutes. Stir in the lemon zest, salt, and black pepper.

To serve, place a fish fillet on each plate and drizzle with the saffron sauce. Garnish with fresh parsley.
