- 1 cup almond flour
- 1/4 cup butter, melted
- 16 oz cream cheese, softened
- 1/2 cup erythritol or stevia
- 2 eggs
- 1 tsp vanilla extract
- Juice of 1/2 lemon
- Fresh berries (optional, for topping)
Instructions

Preheat oven to 325°F.

Mix almond flour and melted butter until well combined. Press mixture into the bottom of a greased 9-inch pie dish.

In a large bowl, beat cream cheese and erythritol or stevia until smooth. Mix in eggs one at a time, then add vanilla extract and lemon juice.

Pour mixture over the crust and smooth the top with a spatula.
