Ingredients
- 1 smoked ham hock
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (15 oz each) red kidney beans, drained and rinsed
- 1 cup chicken broth
- 1 tsp thyme
- 1 bay leaf
- Salt and black pepper, to taste
Instructions

In a large pot, sauté onion and garlic until soft.

Add in ham hock, beans, chicken broth, thyme, and bay leaf.

Bring to a boil, reduce heat and simmer for 2 hours or until beans are tender.

Remove ham hock and shred meat off the bone, discarding fat and bones.

Return shredded meat to the pot and season with salt and black pepper.
