Serves:

Ingredients

  • 2 large ham hocks
  • 2 cups dried chickpeas
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 bay leaf
  • 4 cups of water or chicken broth
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Soak the dried chickpeas overnight in cold water or use the quick soak method.

  2. In a large pot, add the ham hocks, soaked chickpeas, chopped onion, garlic, carrots, celery, bay leaf, and water or chicken broth.

  3. Bring the stew to a boil, then reduce the heat to low and let it simmer for 2-3 hours until the ham hocks are tender.

  4. Remove the ham hocks, shred the meat, and add it back to the stew. Discard the bones and any excess fat.

  5. Adjust seasoning with salt and pepper to taste.

  6. Serve the stew hot in bowls, garnished with chopped fresh parsley.
