  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, room temperature
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • Red food coloring
  • White chocolate chips
  • Mickey Mouse cupcake liners

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with the Mickey Mouse cupcake liners.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a separate bowl, cream together the butter and sugar until light and fluffy.

  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

  6. Add a few drops of red food coloring to the batter and mix until evenly colored.

  7. Fill each cupcake liner ¾ full with batter. Place a few white chocolate chips on top of each cupcake to represent Minnie Mouse’s ears.

  8. Bake for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

  9. Allow the cupcakes to cool completely before decorating.
