  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/2 tsp peppermint extract
  • Red food coloring
  • Lollipop sticks

Instructions

  1. In a medium saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly, until the sugar has dissolved.

  2. Continue to cook the mixture until it reaches a temperature of 300°F (hard crack stage) on a candy thermometer.

  3. Remove the saucepan from heat and stir in peppermint extract and a few drops of red food coloring.

  4. Carefully pour the hot mixture onto a silicone mat or greased baking sheet, creating small circles. Immediately insert a lollipop stick into each circle.

  5. Allow the lollipops to cool and harden completely before removing them from the mat or baking sheet.

  6. Serve and enjoy!
