Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • Crushed peppermint candies, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg, vanilla extract, and peppermint extract, and mix until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Roll the dough into 1-inch balls and place them on the prepared baking sheet.

  6. Using the bottom of a glass or measuring cup, gently press down on each ball to flatten it slightly.

  7. Sprinkle crushed peppermint candies on top of each biscuit.

  8. Bake for 8-10 minutes, or until the edges of the biscuits are lightly golden.

  9. Allow the biscuits to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
