If you like fizzy drinks, you will love this seven-up™ cake. It has a refreshing lemon-lime taste with a yummy pineapple coconut icing.

  • 3cupswhite sugar
  • 1cupbutter
  • ½cupshortening
  • 5eggs
  • 3cupsall purpose flour
  • 1tsplemon extract
  • 12fl ozlemon lime flavored carbonated beverage
  • cupswhite sugar

  • 3eggs
  • 1cupcoconut,flaked
  • 8ozpineapple with juice,crushed
  • ½cuppecans,chopped


  1. Preheat oven to 325 degrees F. Grease and flour one 9×13-inch baking pan.

  2. Cream the 1 cup of butter or margarine, shortening, and 3 cups of white sugar together until light and fluffy. Beat in the eggs one a time beating well after each addition.

  3. Beat in the flour, lemon extract, and lemon-lime soda. Mix well and pour batter into the prepared pan.

  4. Bake at 325 degrees F for 1 hour.


  1. In a saucepan combine 1½ cups of white sugar, ½ cup of butter or margarine, 3 eggs, coconut, pineapple, and nuts.

  2. Cook over medium heat, stirring constantly until the mixture is thick. Pour over cake while the cake is still hot and the icing is bubbling.
