
How To Make Seven-Up™ Cake III
If you like fizzy drinks, you will love this seven-up™ cake. It has a refreshing lemon-lime taste with a yummy pineapple coconut icing.

Ingredients
- 3cupswhite sugar
- 1cupbutter
- ½cupshortening
- 5eggs
- 3cupsall purpose flour
- 1tsplemon extract
- 12fl ozlemon lime flavored carbonated beverage
- 1½cupswhite sugar
- ½cupbutter
- 3eggs
- 1cupcoconut,flaked
- 8ozpineapple with juice,crushed
- ½cuppecans,chopped
Instructions

Preheat oven to 325 degrees F. Grease and flour one 9×13-inch baking pan.

Cream the 1 cup of butter or margarine, shortening, and 3 cups of white sugar together until light and fluffy. Beat in the eggs one a time beating well after each addition.

Beat in the flour, lemon extract, and lemon-lime soda. Mix well and pour batter into the prepared pan.

Bake at 325 degrees F for 1 hour.
Icing:

In a saucepan combine 1½ cups of white sugar, ½ cup of butter or margarine, 3 eggs, coconut, pineapple, and nuts.

Cook over medium heat, stirring constantly until the mixture is thick. Pour over cake while the cake is still hot and the icing is bubbling.
