  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • streusel topping:
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 tsp ground cinnamon
  • 2 tbsp cold unsalted butter, diced

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In a separate bowl, mix together pumpkin puree, oil, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the walnuts.

  4. In a small bowl, mix together flour, brown sugar, cinnamon, and cold butter until crumbly.

  5. Pour the batter into the prepared pan. Sprinkle the streusel topping evenly over the batter.

  6. Bake for 35 minutes or until a toothpick inserted into the center comes out clean. Let it cool before serving.
