How To Make Tex-Mex Enchiladas

  • 8 flour tortillas
  • 2 cups of cooked chicken, shredded
  • 1 cup of black beans, drained and rinsed
  • 1 cup of corn kernels
  • 1 cup of diced tomatoes
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of enchilada sauce
  • 1/4 cup of chopped cilantro
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste


  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix together the chicken, black beans, corn, tomatoes, cilantro, chili powder, cumin, salt, and pepper.

  3. Warm the tortillas in the microwave or on a skillet for a few seconds to make them more pliable.

  4. Spoon the chicken and vegetable mixture onto each tortilla and roll it up tightly.

  5. Place the rolled tortillas seam side down in a baking dish.

  6. Pour the enchilada sauce over the top and sprinkle with the shredded cheese.

  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

  8. Garnish with additional cilantro and serve hot.
