Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 tbsp brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain Greek yogurt
  • 1/4 cup almond milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts
  • 1 tbsp cinnamon
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.

  2. In a large bowl, whisk together flours, brown sugar, baking powder, and baking soda.

  3. In a separate bowl, mix together applesauce, yogurt, almond milk, egg, and vanilla extract.

  4. Fold wet ingredients into dry ingredients and mix until well combined.

  5. Pour batter into cake pan and sprinkle with chopped walnuts and cinnamon.

  6. Bake for 35 minutes or until a toothpick comes out clean when inserted in the center.

  7. Let cool for 5 minutes, then sprinkle with powdered sugar before serving.
