How To Make Trinidad Stewed Chicken

Ingredients
- 4 chicken drumsticks
- 4 chicken thighs
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 bell pepper, diced
- 1 carrot, sliced
- 2 tomatoes, diced
- 2 tablespoons of tomato paste
- 1 teaspoon of thyme
- 1 teaspoon of paprika
- 1 teaspoon of black pepper
- 1 tablespoon of soy sauce
- 2 cups of chicken broth
- Salt, to taste
- 2 tablespoons of vegetable oil
Instructions

Season the chicken drumsticks and thighs with salt, paprika, and black pepper.

Heat the vegetable oil in a large pot over medium heat. Add the chicken and brown it on all sides. Remove the chicken from the pot and set aside.

In the same pot, add the onions, garlic, bell pepper, and carrot. Cook until the vegetables are softened, about 5 minutes.

Add the diced tomatoes, tomato paste, thyme, paprika, black pepper, and soy sauce. Stir well to combine.

Return the chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 1 hour, or until the chicken is tender and cooked through.

Adjust the seasoning with salt, if needed.
