How To Make Slow Cooker Spanish Beef Stew

Ingredients
- 1.5 pounds beef stew meat, cut into cubes
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and cubed
- 1 red bell pepper, diced
- 1 can diced tomatoes (14.5 oz)
- 1 cup beef broth
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions

In a large skillet, heat olive oil over medium-high heat. Add beef cubes and brown on all sides. Transfer the beef to the slow cooker.

In the same skillet, add onion, garlic, carrots, and bell pepper. Cook for 5 minutes until slightly softened. Transfer the vegetables to the slow cooker.

Add potatoes, diced tomatoes with their juice, beef broth, paprika, oregano, thyme, salt, and black pepper to the slow cooker. Stir to combine.

Cover the slow cooker and cook on low heat for 6 hours or until the beef is tender and the flavors are well blended.

Serve the Spanish beef stew hot, garnished with fresh parsley if desired.
