Ingredients
- 2 boneless, skinless chicken breasts, cooked and shredded
- 250g runner beans, trimmed and thinly sliced
- 1 red bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1 small cucumber, thinly sliced
- 1 small bunch of fresh cilantro, chopped
- 1 small bunch of fresh mint, chopped
- 1 small bunch of fresh Thai basil, chopped
- 1/4 cup roasted peanuts, crushed
- for the dressing:
- 2 tablespoons fish sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1 teaspoon soy sauce
- 1 small clove of garlic, minced
- 1 small red chili, thinly sliced
Instructions

In a large bowl, combine the shredded chicken, runner beans, bell pepper, red onion, cucumber, cilantro, mint, and Thai basil.

In a separate small bowl, whisk together the fish sauce, lime juice, honey, soy sauce, garlic, and red chili until well combined.

Pour the dressing over the salad and toss to coat evenly.
