Ingredients

  • 1 cup Puy lentils
  • 1 cup soy beans
  • 1 cup sugar snap peas, trimmed and halved
  • 1 cup broccoli florets
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt and pepper to taste

Instructions

  1. Cook the Puy lentils according to package instructions. Drain and let cool.

  2. In a large bowl, combine the cooked lentils, soy beans, sugar snap peas, and broccoli.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  4. Pour the dressing over the salad and toss to combine.

  5. Sprinkle with fresh parsley before serving.
