- 1 cup Puy lentils
- 1 cup soy beans
- 1 cup sugar snap peas, trimmed and halved
- 1 cup broccoli florets
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- salt and pepper to taste
Instructions

Cook the Puy lentils according to package instructions. Drain and let cool.

In a large bowl, combine the cooked lentils, soy beans, sugar snap peas, and broccoli.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
