How To Make Runner Bean, Smoked Trout & Potato Salad

Ingredients
- 400g runner beans, trimmed
- 200g smoked trout, flaked
- 500g baby potatoes, halved
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- Salt and pepper to taste
- 2 tbsp chopped fresh dill
- 1 red onion, thinly sliced
Instructions

Cook the runner beans in boiling water for 3-4 minutes until tender. Drain and set aside.

In a separate pot, boil the baby potatoes for 10-12 minutes until fork-tender. Drain and let cool slightly.

In a large bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.

Add the cooked runner beans, smoked trout, baby potatoes, chopped dill, and sliced red onion to the bowl. Gently toss to combine.

Serve the salad chilled or at room temperature.
