  • 4 medium-sized potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 spring onions, finely chopped

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Wash and scrub the potatoes, then cut them into wedges.

  3. In a large bowl, toss the potato wedges with olive oil, salt, and black pepper until well coated.

  4. Arrange the potato wedges in a single layer on a baking sheet lined with parchment paper.

  5. Bake in the preheated oven for 35-40 minutes or until golden and crispy, flipping halfway through.

  6. Meanwhile, sauté the chopped spring onions in a pan with a little olive oil until softened.

  7. Once the potatoes are crispy, remove them from the oven and transfer to a serving platter.

  8. Top the potatoes with the sautéed spring onions.

  9. Serve hot and enjoy!
