Ingredients

  • 4 chicken breasts, cut into chunks
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup pineapple chunks
  • 1 cup cooked noodles
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 3 tbsp ketchup
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 garlic clove, minced
  • 1 tsp ginger, grated
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a bowl, combine soy sauce, ketchup, rice vinegar, brown sugar, garlic, ginger, salt, and pepper. Set aside.

  2. Thread the chicken, bell pepper, red onion, and pineapple onto skewers.

  3. Heat vegetable oil in a grill pan or skillet over medium heat. Cook the skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.

  4. Meanwhile, cook the noodles according to package instructions. Drain and set aside.

  5. In the same skillet, add the cooked noodles and the prepared sweet & sour sauce. Cook for 2-3 minutes, stirring well to coat the noodles.

  6. Serve the sweet & sour chicken skewers on top of the fruity noodles. Garnish with chopped green onions.
