How To Make Thai Chicken Noodle Salad

Ingredients
- 8 oz rice noodles
- 2 chicken breasts, cooked and thinly sliced
- 1 cup shredded carrots
- 1 cup chopped cucumber
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped peanuts
- 1/4 cup chopped green onions
- for dressing:
- 3 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tbsp minced garlic
- 1 tbsp grated ginger
- 1 tsp sesame oil
- 1/4 tsp red pepper flakes
Instructions

Cook rice noodles according to package instructions. Drain and rinse with cold water. Set aside.

In a large bowl, combine cooked chicken, shredded carrots, chopped cucumber, cilantro, peanuts, and green onions.

In a small bowl, whisk together soy sauce, lime juice, fish sauce, brown sugar, minced garlic, grated ginger, sesame oil, and red pepper flakes until well combined.

Pour the dressing over the chicken and vegetable mixture. Toss until everything is evenly coated.

Add the cooked rice noodles to the salad and gently toss to combine.
