How To Make Mango & Green Bean Salad with Honey & Passion Fruit Dressing

Ingredients
- 2 large mangoes, peeled and diced
- 300g green beans, trimmed and blanched
- 1 red onion, thinly sliced
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 1/4 cup roasted peanuts, crushed
- 1/4 cup honey
- 1/4 cup passion fruit juice
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions

In a large bowl, combine the diced mangoes, blanched green beans, sliced red onion, cilantro, and mint leaves.

In a separate small bowl, whisk together honey, passion fruit juice, lime juice, salt, and pepper to make the dressing.

Pour the dressing over the mango and green bean mixture and gently toss to combine.

Sprinkle the crushed peanuts over the top.
