Ingredients
- 3 cups sweet corn kernels
- 1 small red onion, finely chopped
- 1 small cucumber, finely chopped
- 1 small red bell pepper, finely chopped
- 1 green chili, finely chopped
- 1/4 cup fresh mint leaves, finely chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp roasted cumin powder
- 1/4 tsp red chili powder
- Salt to taste
Instructions

In a pan, boil sweet corn kernels until cooked. Drain and let them cool.

In a bowl, mix cooled corn kernels, onion, cucumber, red bell pepper, green chili, and mint leaves.

In another bowl, whisk together lemon juice, olive oil, roasted cumin powder, red chili powder, and salt.

Pour the dressing over the corn mixture and toss gently.

Serve chilled and garnish with additional mint leaves.
