Ingredients

  • 4 fish fillets (salmon or cod)
  • 1 cup cornstarch
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cup pineapple chunks (canned or fresh)
  • 1 cup water
  • 1/2 cup white vinegar
  • 1/2 cup brown sugar
  • 3 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. In a shallow bowl, mix together cornstarch, salt, and black pepper.

  2. Coat each fish fillet evenly with the cornstarch mixture.

  3. In a large frying pan over medium-high heat, heat vegetable oil.

  4. Fry fish fillets until golden brown and crispy, about 5-6 minutes on each side. Place on a paper towel-lined plate to remove excess oil.

  5. In the same frying pan, sauté sliced bell peppers and onions until tender, about 2-3 minutes.

  6. Add pineapple chunks, water, white vinegar, brown sugar, ketchup, and soy sauce to the pan. Bring to a boil.

  7. In a small bowl, mix 1 tbsp of cornstarch with 2 tbsp of water until smooth. Add to the pan and stir until the sauce thickens, about 2-3 minutes.

  8. Add the fish fillets to the pan and coat with the sweet and sour sauce.

  9. Serve hot with rice or noodles.
