Ingredients

  • 6-8 oz. ladyfingers
  • 4 oz. brewed espresso or strong coffee, cooled
  • 4 oz. mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder

Instructions

  1. In a small bowl, combine cooled espresso or coffee with 2 tbsp sugar.

  2. In a separate bowl, beat mascarpone cheese until smooth.

  3. In a medium bowl, whip heavy cream until stiff peaks form.

  4. Gently fold whipped cream into mascarpone cheese.

  5. Layer ladyfingers in the bottom of a 9×9 inch baking dish, and brush with espresso mixture.

  6. Spoon half of mascarpone mixture on top of ladyfingers.

  7. Repeat with another layer of ladyfingers and espresso mixture, and top with remaining mascarpone mixture.

  8. Sift cocoa powder over the top.

  9. Cover and refrigerate for at least 4 hours, or overnight.

  10. Serve chilled, enjoy!
