Ingredients

  • 1 pound ground beef
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon dried basil
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 8 cups chicken broth
  • 1 cup small shaped pasta
  • 4 cups fresh baby spinach
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, basil, parsley, garlic powder, salt, and pepper. Mix well and form into small meatballs.

  2. In a large pot, heat olive oil over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes. Remove meatballs from pot and set aside.

  3. In the same pot, add diced onion and minced garlic. Cook until softened, about 2-3 minutes.

  4. Add chicken broth to the pot and bring to a boil. Add pasta and cook until al dente, about 8-10 minutes.

  5. Add meatballs back to the pot along with baby spinach. Cook for an additional 3-5 minutes until spinach is wilted and meatballs are heated through.

  6. Season with salt and pepper to taste. Serve hot.
