  • 4 filet mignon steaks, 6-8 oz each
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 1 tbsp butter
  • 4 sprigs of fresh thyme
  • 2 cloves of garlic, minced


  1. Preheat oven to 400°F.

  2. Rub olive oil over the steaks and season with salt and pepper.

  3. Heat a large skillet over high heat and sear steaks for 2-3 minutes per side until a golden-brown crust forms.

  4. Transfer the skillet to the oven and let cook for an additional 6-10 minutes, or until the internal temperature reaches the desired doneness.

  5. Before removing from oven, baste the steaks with butter, thyme, and garlic.

  6. Let rest for 5 minutes before serving.
