Sweet and tangy bourbon glaze on a juicy salmon fillet, served with mashed sweet potatoes and grilled asparagus.

Ingredients

  • 4 salmon fillets (6 oz. each)
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F and line a baking sheet with aluminum foil.

  2. In a small saucepan, combine bourbon, brown sugar, soy sauce, honey, and Dijon mustard. Bring to a boil over high heat, then reduce heat and let simmer until glaze is thickened and reduced by half, about 10 minutes.

  3. Season salmon fillets with salt and pepper on both sides.

  4. Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and cook for 2-3 minutes per side until browned.

  5. Brush salmon fillets generously with bourbon glaze and transfer to prepared baking sheet. Bake in preheated oven for 10-12 minutes until salmon is cooked through and glazed is bubbly and caramelized.

  6. Serve hot with mashed sweet potatoes and grilled asparagus.
