How To Make Corner Bakery’s Tomato Basil Soup Recipe

A hearty soup made with ripe tomatoes and fragrant basil.

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups ripe tomatoes, chopped
  • 3 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste


  1. Heat olive oil over medium heat in a large pot.

  2. Add onions and garlic and cook until softened, about 5 minutes.

  3. Add tomatoes and broth and bring to a boil.

  4. Reduce heat and simmer for 20 minutes.

  5. Stir in heavy cream and basil and cook for an additional 5 minutes.

  6. Blend the soup until smooth using a blender or immersion blender.

  7. Season with salt and pepper to taste.

  8. Serve hot with crusty bread.
