  • 2 cups roasted chicken, shredded
  • 6 slices bacon, cooked and crumbled
  • 2 medium apples, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup bleu cheese, crumbled
  • For the Vinaigrette:
  • 1/4 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 2 tbsp honey
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine mixed greens, roasted chicken, bacon, chopped apples, dried cranberries, and bleu cheese.

  2. In a small jar, combine apple cider vinegar, extra virgin olive oil, honey, minced garlic, salt, and pepper. Shake well to mix.

  3. Drizzle the vinaigrette over the salad and toss to combine.

  4. Serve immediately.
