Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 4 cups tomatoes, chopped
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

  2. Add the chopped tomatoes and chicken stock to the pot. Bring to a simmer and cook for 30 minutes.

  3. Remove from heat and allow the mixture to cool slightly.

  4. Puree the soup using a blender or immersion blender until smooth.

  5. Return the soup to the pot and stir in the heavy cream and fresh basil. Season with salt and pepper to taste.

  6. Heat the soup over low heat until heated through, about 10 minutes.

  7. Serve the soup hot with crusty bread or croutons.
