How To Make Corner Bakery’s Broccoli Cheddar Soup

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups chicken broth
  • 4 cups fresh broccoli florets, chopped into bite-size pieces
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste


  1. Melt butter in a large pot over medium heat. Add flour and whisk until it becomes a paste, cooking for 1-2 minutes.

  2. Slowly pour in milk and chicken broth, whisking constantly.

  3. Add broccoli and bring to a simmer. Cook for 15-20 minutes or until the broccoli is tender.

  4. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth, then return the soup to the pot.

  5. Stir in grated cheddar cheese and let it melt. Season with salt and pepper to taste.

  6. Serve hot with your choice of bread or crackers.
