A hearty soup made with ripe tomatoes and fragrant basil.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups ripe tomatoes, chopped
- 3 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions

Heat olive oil over medium heat in a large pot.

Add onions and garlic and cook until softened, about 5 minutes.

Add tomatoes and broth and bring to a boil.

Reduce heat and simmer for 20 minutes.

Stir in heavy cream and basil and cook for an additional 5 minutes.
