Ingredients

  • 4 large flour tortillas
  • 2 boneless, skinless chicken breasts, cooked and thinly sliced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 red onion, thinly sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup chipotle sauce
  • 1/4 cup sour cream
  • Salt to taste

Instructions

  1. Warm the tortillas in a dry skillet over medium heat until soft and pliable.

  2. In a large bowl, combine the cooked chicken, black beans, corn, red onion, tomatoes, cilantro, chipotle sauce, and sour cream. Mix well.

  3. Season with salt to taste.

  4. Spoon the chicken mixture onto each tortilla and roll tightly.

  5. Serve the Chipotle Chicken Wraps with additional chipotle sauce and sour cream, if desired.
