Ingredients

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • salt and pepper to taste
  • chopped parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Wash and dry the baby potatoes.

  3. In a bowl, combine the olive oil, garlic powder, dried rosemary, salt, and pepper.

  4. Toss the potatoes in the olive oil mixture until well coated.

  5. Place the potatoes in a single layer on a sheet of aluminum foil.

  6. Fold the foil to create a tightly sealed packet.

  7. Transfer the foil packet to a baking sheet.

  8. Bake in the preheated oven for 40-45 minutes, or until the potatoes are tender.

  9. Carefully open the foil packet, being cautious of the hot steam.

  10. Sprinkle with chopped parsley and serve hot.
