How To Make Copycat Chipotle Chicken Recipe

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons adobo sauce (from a can of chipotle peppers in adobo)
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For serving:
- Cooked rice
- Black beans
- Guacamole
- Salsa
- Sour cream
- Chopped cilantro
Instructions

In a bowl, whisk together the olive oil, adobo sauce, lime juice, garlic, cumin, oregano, paprika, salt, and black pepper.

Place the chicken breasts in a zip-top bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 1 hour, or overnight for best results.

Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the excess marinade.

Grill the chicken for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F (75°C).

Remove the chicken from the grill and let it rest for a few minutes before slicing.

Serve the sliced chicken with cooked rice, black beans, guacamole, salsa, sour cream, and chopped cilantro.
