Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons adobo sauce (from a can of chipotle peppers in adobo)
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For serving:
  • Cooked rice
  • Black beans
  • Guacamole
  • Salsa
  • Sour cream
  • Chopped cilantro

Instructions

  1. In a bowl, whisk together the olive oil, adobo sauce, lime juice, garlic, cumin, oregano, paprika, salt, and black pepper.

  2. Place the chicken breasts in a zip-top bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 1 hour, or overnight for best results.

  3. Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the excess marinade.

  4. Grill the chicken for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F (75°C).

  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.

  6. Serve the sliced chicken with cooked rice, black beans, guacamole, salsa, sour cream, and chopped cilantro.
