How To Make Fresh Raspberry Jelly

Ingredients

  • 2 cups fresh raspberries
  • 1 cup sugar
  • 2 tbsp lemon juice
  • 1 packet gelatin
  • 1/4 cup cold water

Instructions

  1. In a saucepan, combine the fresh raspberries, sugar, and lemon juice.

  2. Cook over medium heat until the raspberries break down, about 5 minutes.

  3. Meanwhile, in a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 minutes.

  4. Once the raspberries are cooked, remove from heat and let them cool slightly.

  5. Strain the raspberry mixture through a fine mesh sieve to remove the seeds.

  6. Return the strained raspberry mixture to the saucepan and stir in the bloomed gelatin.

  7. Cook over low heat for 1-2 minutes, stirring constantly, until the gelatin is fully dissolved.

  8. Remove from heat and let the mixture cool for a few minutes.

  9. Pour the raspberry jelly into serving molds or glasses and refrigerate for at least 2 hours, or until set.

  10. Serve chilled and enjoy!
