- 4 chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 cup chicken broth
- 1 cup heavy cream
- Salt, to taste
- Pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Season the chicken breasts with salt and pepper on both sides.

Heat the olive oil in a large skillet over medium heat.

Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.

In the same skillet, add the chopped onion and minced garlic. Cook until the onion is soft and translucent, about 3 minutes.

Add the sliced bell peppers and mushrooms to the skillet. Cook until the vegetables are tender, about 5 minutes.

Stir in the dried oregano, dried thyme, and paprika. Cook for an additional minute.

Pour in the chicken broth and bring to a simmer. Cook for 2 minutes.

Stir in the heavy cream and bring to a low boil. Reduce the heat and simmer for 5 minutes, or until the sauce has thickened slightly.
