Enchilada Roll-Ups Recipe

Say “ole!” to super-easy and portable flour tortilla enchilada roll ups. It’s a new take on the traditional enchilada recipe. Feel free to make as many as you want because this recipe makes a hefty amount for ten people.


How To Make Enchilada Roll-Ups

Enchilada roll ups filled with cooked turkey, sour cream and Monterey Jack cheese.

Ingredients

  • 16 oz sour cream divided
  • 2 cups cooked turkey , or chicken chopped
  • 8 oz. Colby and Monterey Jack Cheese , shredded , divided
  • 16 oz salsa , divided
  • 10 flour tortillas, soft taco size

Instructions

  1. Mix 1 cup sour cream, turkey, 1 cup cheese and ¼ cup salsa. Spoon about ¼ cup turkey mixture down center of each tortilla; roll up.

  2. Place seam-side down in 13 x 9 inch baking dish.
  3. Top with remaining salsa; cover. Bake at 350 degrees F for 30 minutes.

  4. Sprinkle with remaining cheese.

  5. Bake 5 minutes or until cheese is melted.
  6. Top with remaining 1 cup sour cream.

  7. Sprinkle with chopped tomato, if desired
