Sweet Potato Fries with Sage Recipe

After learning our toddler loved sweet potatoes, this was one of the many creations invented. Perfect for the Fall time, a fresh earthy sage and a gift from grandma was the perfect pair.

Ingredients

  • 4 cups water, for parboiling
  • 24 oz sweet potatoes, peeled and cut into french fries
  • 3 cloves garlic, minced
  • 2 tbsp fresh sage, minced
  • ½ tsp sea salt
  • ¼ tsp cracked pepper
  • 2 tbsp olive oil

Instructions

  1. Pre-heat oven to 425 degrees F.

  2. In a large pot, bring water to a boil and add sweet potatoes, let parboil for about 5 minutes.

  3. Drain sweet potato and place in a baking tray. Add the garlic, sage, salt and pepper and toss to coat evenly.

  4. Arrange fries evenly and drizzle with olive oil.

  5. Bake for 20 minutes, or until crispy on the outside and tender on the inside.

  6. Using a tong, turn fries half way through the cooking time to ensure even cooking.

  7. Serve while hot with ketchup on the side and a garnish of chopped parsley on top. Enjoy!
