  • 1 small head of cabbage, shredded
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 3 cups water
  • 1/4 cup apple cider vinegar
  • 3 tablespoons brown sugar
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


  1. In a large pot, sauté the onion, carrots, and celery until they start to soften.

  2. Add the shredded cabbage and cook for another 5 minutes.

  3. Stir in the vegetable broth, water, apple cider vinegar, brown sugar, tomato paste, thyme, salt, and pepper.

  4. Bring the soup to a boil, then reduce heat and simmer for 30 minutes, or until the cabbage is tender.
