- 1 small head of cabbage, shredded
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 3 cups water
- 1/4 cup apple cider vinegar
- 3 tablespoons brown sugar
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish

In a large pot, sauté the onion, carrots, and celery until they start to soften.
