Ingredients

  • 2 large aubergines
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 4 medium sweet potatoes
  • 2 tbsp cornstarch
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • Vegetable oil for frying

Instructions

  1. Preheat the oven to 200°C (400°F). Slice the aubergines in half lengthwise and score the flesh. Brush with olive oil and season with salt and pepper. Place on a baking sheet and roast for 30 minutes until golden and tender.

  2. In a large pan, heat olive oil over medium heat. Add onion and garlic and sauté until fragrant. Add the bell peppers and cook until they start to soften.

  3. Stir in the diced tomatoes, paprika, cumin, smoked paprika, dried thyme, and season with salt and pepper. Simmer for 15 minutes to allow the flavors to meld together.

  4. Meanwhile, cut the sweet potatoes into fries shape. In a bowl, toss the sweet potato fries with cornstarch, smoked paprika, garlic powder, and salt until evenly coated.

  5. Heat vegetable oil in a deep pan or fryer to 180°C (350°F). Fry the sweet potato fries in batches until crispy and golden brown. Drain on paper towels.

  6. Remove the roasted aubergines from the oven and spoon the goulash sauce over each half. Serve with sweet potato fries on the side.
