How To Make Real Welsh Rarebit

Ingredients

  • 4 thick slices of bread
  • 250g cheddar cheese, grated
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 tsp Dijon mustard
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup milk
  • 1 egg yolk

Instructions

  1. Toast the bread slices and set aside.

  2. In a saucepan, melt the butter over medium heat.

  3. Add the flour and whisk until smooth.

  4. Gradually pour in the milk, whisking constantly, until the mixture thickens.

  5. Add the grated cheese, mustard, Worcestershire sauce, paprika, salt, and black pepper. Stir until the cheese is melted and the sauce is smooth.

  6. In a small bowl, beat the egg yolk. Gradually add a spoonful of the cheese sauce to the beaten egg yolk, whisking constantly. This will temper the egg yolk and prevent it from curdling.

  7. Pour the tempered egg yolk mixture back into the saucepan and whisk until well combined.

  8. Continue to cook the sauce over low heat for a few more minutes, until it thickens slightly.

  9. Place the toasted bread slices on a baking sheet and evenly spread the cheese sauce over each slice.

  10. Broil the Welsh Rarebit in the oven for 2-3 minutes, until the cheese sauce is bubbly and slightly browned.

  11. Serve hot and enjoy!
