  • 2 cups sliced strawberries
  • 2 cups chopped rhubarb
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 pie crust

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the strawberries, rhubarb, sugar, flour, lemon juice, vanilla extract, cinnamon, and salt. Mix well to coat the fruit.

  3. Roll out the pie crust and place it in a 9-inch pie dish. Trim and crimp the edges as desired.

  4. Pour the strawberry rhubarb mixture into the pie crust.

  5. Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.

  6. Remove from the oven and let cool before serving.
