How To Make Welsh Cakes

Delicious traditional Welsh cakes, perfectly spiced and buttery.

Serves:

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup caster sugar
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and diced
  • 1/2 cup currants or raisins
  • 1 large egg, beaten
  • 1-2 tbsp milk
  • 1/4 cup powdered sugar, for dusting

Instructions

  1. In a bowl, mix flour, sugar, baking powder, cinnamon, nutmeg, and salt.

  2. Rub in the cold butter until it resembles breadcrumbs.

  3. Stir in the currants/raisins.

  4. Add the beaten egg and mix until the dough comes together.

  5. Add milk if needed to make a soft dough.

  6. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.

  7. Use a round cookie cutter to cut out Welsh cakes.

  8. Heat a griddle or non-stick skillet over medium heat.

  9. Cook the Welsh cakes for about 2-3 minutes on each side until golden brown.

  10. Remove from heat and dust with powdered sugar.

  11. Serve warm or at room temperature.
