Ingredients
- 1 sheet of ready-made puff pastry
- 2 leeks, thinly sliced
- 150g Welsh goat’s cheese, crumbled
- 2 eggs
- 150ml double cream
- Salt and pepper to taste
Instructions

Preheat the oven to 200°C (400°F) and line a tart tin with the puff pastry sheet.

In a frying pan, sauté the sliced leeks until they are soft and slightly caramelized.

Spread the cooked leeks evenly over the pastry base, then sprinkle the crumbled goat’s cheese on top.

In a bowl, whisk together the eggs, double cream, salt, and pepper. Pour this mixture over the leeks and cheese.

Place the tart tin in the preheated oven and bake for 40 minutes, or until the pastry is golden and the filling is set.
