Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn kernels, drained
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers (red, yellow, or orange)
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. In a large bowl, combine black beans, corn, tomatoes, red onion, bell peppers, cilantro, and garlic.

  2. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper. Pour over the bean mixture.

  3. Toss everything together until well coated.

  4. Serve immediately with tortilla chips.
